But a circular animated icon in the taskbar is still present.

That is from the nm-applet program, which is provided by network-manager-gnome in Debian, it should be named similarly in Mint.

Either uninstall that package or copy /etc/xdg/autostart/nm-applet.desktop to ~/.local/autostart/ and add Hidden=true to the end of the file to prevent it from autostarting.

You should also either remove the modemmanager package or disable ModemManager.service, they are not needed in a VM.

I tried this command again on a fresh fully installed copy of Mint 19.

Code: Select all
sudo apt-get purge network-manager

This time when I rebooted I got an error and then a black screen.

unable to launch "cinnamon-session-cinnamon" X session --- "cinnamon-session-cinnamon" not found; falling back to default session.

So removing NetworkManager might not be ideal.

You should always check exactly what APT wants to remove before replying "yes" to the confirmation message, you were told that your desktop would be removed but you clearly didn't listen.

Anyway, this might get your desktop back:
Code: Select all
# apt-get install task-cinnamon-desktop

I'm not sure, because I avoid metapackages, but I think you can do
Code: Select all
apt-get install task-cinnamon-desktop
apt-get install network-manager

You will get a message that says "network-manager set to manually installed" and then I think you can remove it without removing everything else.

If that doesn't work, check what other packages task-cinnamon-desktop installs, and install the packages manually instead of the task- package. (check task-desktop and cinnamon-desktop-environment first - these are also metapackages) but don't install network-manager.

After looking some more, I see that the cinnamon package recommends network-manager-gnome, which in turn depends on network-manager. If you install the cinnamon desktop with individual packages instead of the task package, you could do
Code: Select all
apt-get --no-install-recommends cinnamon
to avoid network-manager. Take note of what other recommended packages will be excluded in that - you might want to install some of those.

@OP: it's probably worth noting at this stage that if plain `dhclient` connected you up then NetworkManager should work as well — did you ever check the settings, as I suggested?
